At Peninsula, the refined seafood restaurant at the adults-only Pueblo Bonito Pacifica Golf & Spa Resort in Cabo San Lucas, the ocean is not the only thing that takes center stage. Under the attentive guidance of Chef Carlos Arreaga, the kitchen delivers dishes that showcase a masterful command of smoke—layered, balanced, and deeply flavorful.

Service here is as polished as the cuisine. The staff is warm, attentive, and genuinely enthusiastic, while Chef Arreaga himself is eager to share the inspiration behind his dishes. Our evening began with a vibrant trio of salsas—salsa tatemada, salsa verde, and an
exquisite carrot-and-habanero salsa that quickly became a favorite. A standout starter followed: tiradito of fish cured with beets, served over a silky purée of charred jalapeño chile—an electrifying balance of brightness and depth. Equally memorable was a tomato and
beet salad layered with fermented tomatoes, kimchi, lime, and a delicate base of tofu cream, crowned with exceptionally fresh goat cheese. The interplay of acidity, fermentation, and creaminess was beautifully composed.

The signature zarandeado fish with asparagus highlighted the chef’s remarkable command of smoke. Tender, delicately smoky, and perfectly cooked, the dish captured the essence of coastal Baja cuisine. Even the cocktail program celebrates this theme. The Smoked Mexican Old Fashioned arrives theatrically inside a smoke-filled box opened tableside, releasing aromatic clouds before revealing a seductive blend of Abasolo whiskey with notes of cacao, finished with a toasted marshmallow. It was so compelling we ordered a second. The restaurant’s understated elegance—simple décor designed not to distract from the sweeping beach views—creates the perfect stage for Chef Arreaga’s cuisine. For diners who appreciate the seductive complexity of smoke woven into refined coastal cooking, Peninsula is a must-visit in Cabo.
